Taiwan oolong tea is allowed to oxidize and absorb oxygen after being hand- picked. Taiwan oolong tea leaves are set outside under the sun to wilt. This causes a chemical reaction which produces oolong tea's unique aroma and taste. Taiwan oolong tea can be very green or dark depending on the amount of oxidation that has occurred. Some Taiwan oolong teas are roasted at different temperatures and some aren't roasted at all. Taiwanese oolong teas are sought after worldwide. In Taiwan these types of teas are referred to as High Mountain Oolong Teas, or Taiwanese high mountain oolong tea.
